Vegan "Crab Cakes"
Ingredients-2 Cans Artichoke hearts--chop them -1/2 diced onion -1/2 diced red pepper -2 celery stalks -1 shredded carrot -2 cloves of garlic chopped -2 t capers-chopped -2 t dijon mustard -3/4 C vegan mayonnaise -3 T lemon juice spices: -3 T ground flax seed -1/4 t nutmeg -1/4 t clove -1/4 t ginger -1/4 t cinnamon -1/2 t crushed red pepper -1/2 t paprika -1/2 t cardamom -1 Bay leaf--crushed -salt to taste -pepper to taste -1 1/2 C bread crumbs -oil to Fry
Put all vegetables in a mixing bowl--chopped & mix well
Add mayonnaise, mustard, and spices & mix really well
Add lemon juice & stir
Add bread crumbs and mix well till it can form into patties
Form into patties and fry on Medium High in oil until golden brown & flip
Serve with your favorite sauce. On top of a salad. As a sandwich
