We Be Jammin' Rice &Jamaican curried mushrooms




1/2 onion

1 red pepper

2 stalks celery

1/2 pound of sliced mushrooms

2 cloves of garlic

1 can coconut milk

1 t curry powder

1 t salt

1t pepper

1/2 t cinnamon

1/4 t nutmeg

Rice ingredients:

1 C Jasmine Rice(or rice of your choice)

1/8 C shredded unsweetened coconut

2 T coconut oil

juice of 2 tangerines or oranges

1 t cinnamon

1 t salt

1 t pepper

1/12 C water


Curried Mushroom directions:

sautee garlic & onions in olive oil

add rest of veggies except mushrooms & sautee

add coconut milk

add mushrooms

cook for 25 minutes on medium low


add spices

Serve with rice

Rice directions:

Toast rice in coconut oil on medium heat

Add water and spices & bring to a boil

Place on low heat & add coconut, the juice of the tangerines(squeeze with hands)

Simmer rice, covered for as long as the package says.....usually 20 minutes for white rice & 30-40 for brown....until water is absorbed & rice is a soft consistency
