Vegan Almond Scones




7 C Flour

1 C sugar

1 T & 1 t baking powder

1 t baking soda1

/2 t salt

1/2 # earth balance(can also use margarine or butter if you’re not vegan)

8 oz almond paste

2 Cans Coconut Milk (not light)optional

1 t vanilla extract & 1/2 t almond extract


Mix dry ingredients: flour, sugar, b.powder, b.soda, & salt

Add Earth Balance & almond paste & mix till "butter" is incorporated into dry ingredients (will look like pea size pieces)

Add coconut milk and extracts & mix until just combined **Do not overmix! Dough will be wet and sticky.

Put 1/2 the dough out onto well floured board & kneed a little to incorporate some flour & roll out into rectangles about 1 inch thick

Cut into triangles & bake on cookie sheet @ 375 degrees for 30-35 minutes

Repeat with remaining dough

Makes 24 large scones
