Pineapple Upside Down Cake(Vegan) 

 

 

  • Ingredients

    1 C raisins

    2 C oats

    3/4 C cornmea

    l1 T rum

    1 t baking powde

    r1/2 t baking soda

    1/4 C ground flax

    1/4 t salt

    1/2 C sugar in the raw(or other sugar)

    3 C almond milk(rice milk/soy etc.)

    (3 cups of liquid with raisin soak)

    1 T vanilla

    2 T coconut oil

    1/4 C brown sugar

    14 oz pineapple rings(fresh or canned)

    14 oz cherries(fresh or canned)

  • Directions

    Soak raisins in boiling water for 10 minutes & save liquid

    puree raisins

    whisk together all dry ingredients in mixing bowl

    add liquid from raisins & milk to equal 3 cups of liquid

    add vanilla & whisk together

    Preset Oven to 375 degrees

    place 10 inch cheese cake pan with coconut oil in oven for 2 minutes to melt

    add brown sugar & spread evenly in pan

    Place pineapple rings in pan

    Place cherries in the middle of each pineapple ring

    Add the rest of the mixed ingredients to pan & Bake at 375 degrees for 1 hour

    poke holes with fork & add 1 T of rum

    Refrigerate overnight before serving
