Mushroom Walnut Veggie Burgers

 

 

  • Ingredients

    1 C of brown rice

    1 T-3 T olive oil

    Bouilon cube

    ½ diced onion

    2 cloves of garlic chopped

    ½ pepper diced

    1 Qt mushrooms (diced)

    2 C walnuts

    salt and pepper to taste

    breadcrumbs

  • Directions

    Add 1 T olive oil to pot

    Brown rice a little 2-3 min on med high

    add 1 & 1/2 C Water

    Bring to a boil & add 1 Bouilon Cube

    Let Rice simmer w/ a cover on it for 35-40 minutes....until fully cooked

    Sautee onion & garlic in oil on medium low

    add pepper and cook till soft

    add mushrooms

    Blend (preferably in food processor): cooked rice, veggies with 2 C walnuts

    Add salt & pepper to taste

    add any fresh or dried herbs you choose

    Refrigerate a couple of hours or overnight

    If mix is sticky/wet and not holding together---add bread crumbs until you can form them into patties

    Cook on stovetop in olive oil or on the grill

    Add your favorite fixings, avocado, tomato, lettuce, cheese
