Falafel Salad

 

 

  • Ingredients

    1 16oz can Garbonzo beans
    1/4 onion2 cloves garlic
    1/2 pepper
    1/4 c tahini
    1 T each dill, oregano, cumin
    2 t thyme
    1 t ground pepper
    1/2 t salt
    2 T ground flax seeds
    1 T lemon juice
    2-3 T water
    1/4 c bread crumbs

    For the salad:

    1/4 head of lettuce
    2 T lemon juice
    1 T red wine vinegar
    1 1/2 T olive oil
    12 ea kalamata olives
    2 T feta cheese
    1 tomato
    1/2 pepper

  • Directions

    place drained and rinsed beans in a bowl with diced onion, and minced garlic
    mash up beans with a whisk or potato masher, it takes a minute but it will turn into a paste
    add all remaining ingredients and mix with a rubber spatula, it should be pretty stiff
    heat a skillet on medium add a couple tablespoons of olive oil and form golf ball sized balls press them into pattys and fry on both sides until golden brown
    repeat until mix is used up
    place on a paper towel lined plate
    For salad: wash all veggies
    chop lettuce and place in a bowl
    chop olives and put in the bowl with feta cheese and lettuce
    mix with all wet ingreadients and put on to plates
    garnish with tomato and peppers place falafel on top and eat!!!!!
