Not Your Mamas Meatballs

(Vegetarian)

 

 

  • Ingredients

    1/4 onion

    1 carrot

    1 1/2 C bulgar

    1/2 C red lentils

    4 C Water

    1 Boullion Cube

    2 ribs of celery (chopped)

    1 pepper(chopped)

    4 cloves garlic(chopped)

    1 oz fresh basil(chopped)

    2 t oregano

    2 t thyme

    2 t black pepper

    1 T parsley

    1 t salt

    1/4 cup ground flax seed

    1/2 C seasoned bread crumbs

    Parmesan cheese (optional if vegan)

  • Directions

    Sautee onion, carrot, lentils & bulgar wheat in a little olive oil

    Add water & Boullion & bring to a boil

    Simmer 15-20 minutes until water is absorbed

    Put your finished mix from above in a mixing bowl & addCelery, pepper,garlic1 oz fresh basil,oregano,thyme,black pepper,parsley,salt,ground flax, seeds, easoned bread crumbs& Parmesan cheese (optional if vegan)

    Mix well & form into balls with spoon or ice cream scoop(makes 20 ice cream scoop veggie balls)Drizzle w/ olive oil & Bake in the oven at 375 degrees in pan for 30 minutes or until browned
